This soup is great served with a tossed salad and garlic toast.&lt;br /&gt;&lt;br /&gt;Meatball Tortellini Soup&lt;br /&gt;1 can (14 oz) beef broth&lt;br /&gt;12 frozen cooked Italian meatballs&lt;br /&gt;3/4 cup fresh baby spinach&lt;br /&gt;3/4 cup stewed tomatoes&lt;br /&gt;1 can mexicorn; drained&lt;br /&gt;3/4 cup frozen cheese tortellini&lt;br /&gt;1 dash salt &amp;amp; pepper&lt;br /&gt;In a large saucepan, bring broth to a boil. Add meatballs. Reduce heat; cover and simmer for 5 minutes. Add spinach, tomatoes and corn; cover and simmer for 5 minutes. Add the tortellini, salt &amp;amp; pepper; cover and simmer for 3 more minutes or until tortellini is tender. After it was just the two of us we found that we seemed to be eating leftovers for days. Sometimes you can downsize the recipes and sometimes you just end up putting the extras in the freezer. We found that once we started cooking for just two we became a little more adventurous and were willing to try new dishes and new combinations. It was also easier to come up with new meals when there were only two sets of taste buds to cater to instead of 4 or 5 or more. We searched through the cookbooks that we had on hand looking for recipes that were off limits because the kids just wouldn't eat them. We also looked for new cookbooks and recipes and tried to include something new every two weeks or so depending on when we did our grocery shopping. . One our favorite sources for new recipes was a magazine put out by Taste of Home called Cooking for 2. Unfortunately it is no longer in publication. However, there are many other sources for new meals available through many of the online recipe sites, the bookstore or even the local library.
